As you may have guessed, here at OutdoorFest we love to pair active adventure with cold brews (after we’re done of course) so we were excited to hear that our our beer sponsor Sierra Nevada whipped up a series of recipes that not only pair well with beer but actually help promote muscle repair and reduce inflammation post workout.
Collaborating with their chefs to make athlete-friendly recipes, each meal aims to replace the calories lost during the race through a balance of carbohydrates, proteins, and fats. Today, we launch the first in a series of recipes to help your body recover after you work up a sweat.
Post-Workout Recovery Recipe #1: Roasted Pale Ale Chicken Spinach Salad
Ingredients:
½ lbs Chicken Breast
Marinade:
½ cup Greek Yogurt
1/8 cup Pale Ale
1 teaspoon Salt
1 tablespoon lemon juice
Salad:
2 cups wash spinach leaves
¼ cup chopped walnuts
½ cup mixed berries
½ cup crumbled blue cheese
Dressing:
¼ cup Pale Ale
1½ cup Rice Oil (or any other lighter bodied oil)
2/3 c. lemon juice
1 cup fresh basil
¼ cup Rice Wine Vinegar
1 teaspoon chopped garlic
¼ cup honey
3 teaspoon sugar
1 teaspoon salt
1 teaspoon ground pepper
Marinade:
• Mix together, yogurt, Pale Ale, salt, and lemon juice together
• Pour into plastic bag, add chicken and let sit for at least 2 hours
Roast Chicken:
• Heat oven to 400֯
• Spray 13x9 baking dish with olive oil
• Bake marinated chicken uncovered 25-35 minutes or until juice of chicken is no longer pink
• Let cool 5-10 min, then slice
Dressing:
• While the chicken roasts, combine all ingredients into a blender except oil.
• Pulse blender to start process. When the basil is mostly broken down turn blender to high and turn on (make sure lid is on the blender) and slowly add oil until emulsified.
• NOTE: This will make more than you need, save excess dressing in air tight container
Prepare the Salad:
• In a large bowl, combine the spinach, chopped walnuts, berries, and blue cheese
• Add dressing, mix
• Top with sliced roasted chicken
• Enjoy alongside a Sierra Nevada Pale Ale
